Cook noodles as per instruction and cool them down to room temperature.
In a bowl combine pumpkin, ginger powder, red chilli flakes, pepper powder, mixed herbs, maida, cornflour, cooked noodles, and mix well. Take a small size ball and shape it into a flat Tikki.
Heat oil in a pan and place the fritters and cook on both sides till they turn golden brown in color and crispy.
Serve hot with chutney or any other dip of your choice.
